I’m nuts over this Raw Baby Kale Salad with Apples, Sunflower Seeds, and Lemon-Dijon Vinaigrette, and I’ve made this a few times for parties. Even though there is apple, this is still a pretty low-carb salad because it only uses one apple for 4 servings, and it’s also gluten-free and vegan.
